Final Salute to Summer

Today sadly marks the last day of summer and we have now officially entered fall. Listen carefully…you can probably hear the sounds of my sobs from where-ever you may be.

Now, don’t get me wrong – I love fall. It is so spectacular with falling leaves of red and gold. Thanksgiving and Halloween, time for family and friends, are nearing. Cooler days means more time inside to cook, read and watch movies. Yup, this is all wonderful but I will always be a summer girl. What’s that saying? You can take the girl out of Australia but you can’t take Australia out of the girl? GIVE ME MY SUMMER BACK!!! 😦

Ok…I’m dealing with it. *Deep Breath*

To say goodbye to the sun-kissed, juicy stone fruits that we are showered with every summer, I grabbed a few ripe peaches from the store and made the easiest dessert. Ever. I didn’t follow just one recipe for this – I just followed a bit of this and a bit of that. I doubt there is any right or wrong way.

Baked Peaches – Serves 2

2 ripe peaches, halved and de-stoned
2 teaspoons of butter
2 tablespoons of sugar, preferably brown but white sugar works too.

Method:
Preheat the oven to 400F/200C. Place the halved peaches, facing upwards, in a baking tray. Dollop 1/2 teaspoon of butter and 1/2 tablespoon of sugar on each peach half. Feel free to add more/less sugar or butter depending on your personal taste. Bake in the oven for about 20 minutes.

Remove from baking tray and serve with either ice-cream or whipped cream.

Amazingly simple. Amazingly good.

Goodbye summer. I will miss you.
