“I Missed You” Hearts

So…B just returned from a work trip and yes, I missed him! Badly. Very badly! I had some time before I was to surprise him at the airport and so I thought I would make him these unbearably cute little sponge hearts that I had seen the recipe for a few months ago.

I simplified the recipe – I didn’t use the cream cheese at all – and, I admit, I kinda cheated on this one. Or as I prefer to call it, I took a “short-cut”. Rather than bake the sponge cake (fairly time-consuming and difficult to perfect), I used an Asian sponge cake that I purchased from a bakery. What a cheater! 😉 But, I don’t care – it saved me a lot of time and a lot of money – the Asian sponge only cost me $3!! Bargain. And oh, it was damn good. Asian sponges are just so incredibly light that it feels like you are nibbling on sweetened clouds! Also, being that they are so airy and fluffy, you can *almost* convince yourself that there are no calories…

So, you can either follow the link to the recipe or I’ll just give you simple, quick instructions on how to make these cuties. Either make or buy a sponge cake (Victorian or Asian, no big deal) and with a heart shaped cookie cutter, cut out as many hearts as you wish to make.

Take each heart and slice them horizontally down the middle so that you have 2 thin slices of heart (oh, this sounds like a manual for brutal heart surgery!).

Pour a small carton of whipping cream into a bowl and add a tablespoon of icing sugar and a small splash of vanilla and whip until light and fluffy. To each half of the hearts, spread a very thin layer of strawberry or raspberry jam. Place one of the heart halves on the plate that you will be serving on (it makes for easier transporting later). Thinly slice fresh strawberries and lay them on the half of the heart that you have placed on the serving plate. Layer a heaped spoonful of the whipped cream on top of the strawberries and place the other half of the heart on top. Dust with icing sugar and ta-da! Easy peasy – I missed you hearts!

These were appreciated more than I had hoped so I will definitely be making them again. You could make these for Valentine’s Day, for a romantic dinner or just because they are just so adorable and delectable! Look at ’em! Awwwww!
